Marinade

  • 2 tbsp rice vinegar
  • 2 tbsp mirin

  • 1 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 inch fresh ginger, minced
  • 2 tbsp minced green onions

Instructions

  1. Prepare the marinade: In a large bowl, combine the miso paste, rice vinegar, mirin, honey, soy sauce, minced garlic, grated ginger, and minced green onions. Whisk together until smooth and well incorporated.
  2. Marinate the chicken: Add the boneless skinless chicken thighs to the bowl with the marinade. Toss the chicken thoroughly to coat each piece evenly. Allow it to marinate for a few minutes to absorb the flavors.
  3. Arrange the chicken: Place the marinated chicken thighs in a single layer on an air fryer basket or a baking tray. Pour all of the remaining miso glaze over the chicken to ensure maximum flavor.
  4. Air fry the chicken: Set the air fryer to 375°F (190°C) and cook the chicken for 20 minutes, flipping the pieces halfway through the cooking time to ensure even cooking.
  5. Broil for crust: After air frying, place the chicken under the broiler for 2 minutes to develop a nice crust and enhance the color and texture of the skin.
  6. Check doneness: Use a meat thermometer to confirm the chicken’s internal temperature has reached 165°F (74°C) to ensure it is fully cooked and safe to eat.
