Description

A rustic and easy-to-make mixed berry galette with a flaky, buttery crust and juicy, sweet berries. Perfect for showcasing fresh summer fruit and impressing guests with minimal effort.


Ingredients

1 1/4 cups all-purpose flour

1 tablespoon granulated sugar

1/4 teaspoon salt

1/2 cup cold unsalted butter, cubed

35 tablespoons ice-cold water

1 teaspoon lemon juice

2 cups mixed berries (blueberries, raspberries, blackberries, strawberries)

1/4 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon lemon juice

Pinch of salt

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for sprinkling)


Instructions

  1. In a bowl, whisk together flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Combine lemon juice and ice water. Gradually add to the flour mixture until the dough comes together.
  3. Shape the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  4. In another bowl, toss the mixed berries with sugar, cornstarch, lemon juice, and salt. Let sit for 10 minutes.
  5. Roll the chilled dough into a 12-inch circle on parchment paper and transfer to a baking sheet.
  6. Spoon the berry mixture into the center, leaving a 2-inch border. Fold the edges over the filling, pleating as needed.
  7. Brush the crust with egg wash and sprinkle with coarse sugar.
  8. Bake at 400°F (200°C) for 30–40 minutes, until the crust is golden and the filling is bubbly.
  9. Let the galette cool slightly before slicing and serving.

Notes

  • You can use frozen berries without thawing.
  • A 1:1 gluten-free flour blend works well for a gluten-free version.
  • Brush the bottom of the crust with egg white to prevent sogginess.
  • Dough can be made ahead and stored in the fridge or freezer.
