Classic no‑bake peanut butter balls made with creamy peanut butter, powdered sugar, crispy Rice Krispies, and a chocolate coating—sweet, salty, crunchy, and easy to make.
Ingredients
1 ½ cups creamy peanut butter
½ cup unsalted butter, softened
1 teaspoon vanilla extract (optional)
3 ½ cups powdered sugar
3 cups Rice Krispies cereal
2 cups semi‑sweet chocolate chips
2 tablespoons coconut oil or vegetable shortening
Instructions
- Beat together peanut butter, softened butter, and vanilla extract (if using) until smooth.
- Gradually stir in powdered sugar until fully combined and dough-like.
- Fold in Rice Krispies cereal until evenly distributed.
- Scoop about 1-inch balls and place them on a parchment-lined baking sheet.
- Freeze the balls for about 15 minutes to firm up.
- Meanwhile, melt chocolate chips with coconut oil in the microwave—stirring every 15 seconds until smooth.
- Dip chilled balls into melted chocolate, allowing excess to drip off, and place back onto parchment.
- Refrigerate for at least 30 minutes until chocolate is set. Serve chilled or at room temperature.
Notes
- Use milk, dark, or butterscotch chips in place of semi-sweet chocolate.
- Roll balls in shredded coconut, chopped nuts, or cocoa powder instead of coating in chocolate.
- Add a pinch of cinnamon or nutmeg to the dough for a festive twist.
