These Oatmeal Chocolate Chip Bars are chewy, buttery, and packed with chocolate chips, making them the perfect easy dessert. With the same delicious flavor as oatmeal chocolate chip cookies, but in a bar form, these are sure to become a family favorite!
Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
14 tablespoons unsalted butter (1 3/4 sticks)
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3 cups quick cook oats (old fashioned oats will work as well)
1 cup milk chocolate chips
Instructions
Preheat Oven: Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch pan with cooking spray.
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
Cream Butter and Sugar: In a large bowl, beat together the butter and sugars until light and fluffy.
Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract and mix.
Combine Dry and Wet Ingredients: Add the dry ingredients to the wet mixture, beat on low speed until combined, then increase the speed until the dry ingredients are fully incorporated.
Stir in Oats and Chocolate Chips: Gently stir in the oats and chocolate chips.
Press and Bake: Press the batter into the prepared baking dish. Bake for 25 minutes, or until the edges are golden brown.
Cool and Serve: Allow the bars to cool before cutting into squares. Store in an airtight container for up to two weeks.
