Description

This creamy, cheesy corn dip flavored with Old Bay seasoning is a quick, crowd-pleasing appetizer. Sweet corn, zesty spices, and rich creaminess make it perfect for summer cookouts or casual gatherings.

Ingredients

1 (8‑oz.) pkg. cream cheese, softened

1 (8‑oz.) container sour cream (about 1 cup)

1 tablespoon Old Bay seasoning

1 ½ teaspoons hot sauce (such as Tabasco)

1 (8‑oz.) pkg. thick‑cut, pre‑shredded Mexican 4‑cheese blend

1 (4‑oz.) can diced green chiles, drained

1 (15‑oz.) can sweet whole‑kernel corn, drained and divided (about 1 ¼ cups + ¼ cup)

Fresh cilantro leaves (optional)

Tortilla chips, for serving

Instructions

  1. In a medium bowl, mix softened cream cheese, sour cream, Old Bay seasoning, and hot sauce until smooth and creamy.
  2. Fold in shredded cheese, green chiles, and 1 ¼ cups of corn until well combined.
  3. Top with remaining ¼ cup of corn and garnish with fresh cilantro if desired.
  4. Serve immediately with tortilla chips for dipping.

Notes

  • For extra spice, add diced jalapeños.
  • Add chopped roasted red peppers or bell peppers for more color and sweetness.
  • A squeeze of lime juice adds freshness.
  • Use reduced-fat cream cheese and sour cream for a lighter version.
  • Swap Old Bay with Cajun or taco seasoning for a different flavor.
