Description
This one-pound meatloaf is a comforting, hearty, and easy-to-prepare dish made with ground beef, classic seasonings, and a sweet, tangy glaze. Perfect for family dinners or meal prep.
Ingredients
1 lb ground beef (80/20 lean-to-fat ratio)
1 egg
1/2 cup breadcrumbs
1/4 cup milk
1/2 cup finely diced onion
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp dried Italian herbs
1 tsp salt
1/2 tsp black pepper
1/3 cup ketchup
2 tbsp brown sugar
1 tbsp Worcestershire sauce (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
- In a small bowl, combine the breadcrumbs and milk, letting them soak for 5 minutes.
- In a large bowl, mix together the ground beef, soaked breadcrumbs, egg, onion, garlic, Worcestershire sauce, Italian herbs, salt, and pepper. Mix gently until just combined.
- Shape the mixture into a loaf and place it in the prepared pan.
- In a separate bowl, mix together ketchup, brown sugar, and Worcestershire sauce for the glaze.
- Spread half of the glaze on top of the meatloaf.
- Bake for 35–40 minutes. Add the remaining glaze during the last 10 minutes of baking.
- Check that the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- Don’t overmix the meat mixture to keep the meatloaf tender.
- Letting the meatloaf rest helps retain its juices when slicing.
- You can prepare the meat mixture ahead and refrigerate until ready to bake.
- Freezes well for up to 3 months when wrapped tightly.
