Description

This one-pound meatloaf is a comforting, hearty, and easy-to-prepare dish made with ground beef, classic seasonings, and a sweet, tangy glaze. Perfect for family dinners or meal prep.


Ingredients

1 lb ground beef (80/20 lean-to-fat ratio)

1 egg

1/2 cup breadcrumbs

1/4 cup milk

1/2 cup finely diced onion

2 cloves garlic, minced

1 tbsp Worcestershire sauce

1 tsp dried Italian herbs

1 tsp salt

1/2 tsp black pepper

1/3 cup ketchup

2 tbsp brown sugar

1 tbsp Worcestershire sauce (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a small bowl, combine the breadcrumbs and milk, letting them soak for 5 minutes.
  3. In a large bowl, mix together the ground beef, soaked breadcrumbs, egg, onion, garlic, Worcestershire sauce, Italian herbs, salt, and pepper. Mix gently until just combined.
  4. Shape the mixture into a loaf and place it in the prepared pan.
  5. In a separate bowl, mix together ketchup, brown sugar, and Worcestershire sauce for the glaze.
  6. Spread half of the glaze on top of the meatloaf.
  7. Bake for 35–40 minutes. Add the remaining glaze during the last 10 minutes of baking.
  8. Check that the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • Don’t overmix the meat mixture to keep the meatloaf tender.
  • Letting the meatloaf rest helps retain its juices when slicing.
  • You can prepare the meat mixture ahead and refrigerate until ready to bake.
  • Freezes well for up to 3 months when wrapped tightly.
