Instructions

  1. Caramelize the Onions: Heat butter in a large skillet over medium-low heat. Add thinly sliced onions and ½ teaspoon salt. Cook slowly, stirring occasionally, for 30–35 minutes until onions are golden brown and jammy.
  2. Add Garlic: Stir in minced garlic and cook for 1–2 minutes until fragrant. Remove skillet from heat and allow onion mixture to cool slightly.
  3. Prepare Dip Base: In a mixing bowl, combine softened cream cheese, sour cream, and 1½ cups of shredded Gruyere cheese. Stir until smooth and well blended.
  4. Mix in Onions and Seasonings: Fold the caramelized onions, fresh thyme, remaining ½ teaspoon salt, and black pepper into the cheese mixture thoroughly.
  5. Assemble the Dip: Transfer the mixture into a greased baking dish, smoothing the top. Sprinkle the reserved ½ cup of Gruyere cheese and Parmesan cheese (if using) evenly over the dip.
  6. Bake the Dip: Preheat your oven to 375°F (190°C). Bake for 20–25 minutes until the dip is hot, bubbly, and topped with a golden crust.
