Ingredients
Dip Ingredients
- 2 tablespoons butter (or olive oil)
- 2 large yellow onions (thinly sliced)
- 1 teaspoon salt (divided)
- 1 clove garlic (minced)
- 8 oz cream cheese (softened)
- 1 cup sour cream (or mayonnaise)
- 2 cups Gruyere cheese (shredded, reserve ½ cup for topping)
- ¼ cup Parmesan cheese (grated, optional for topping)
- ½ teaspoon black pepper
- 1 teaspoon fresh thyme (plus more for garnish)
Instructions
- Caramelize the Onions: Heat butter in a large skillet over medium-low heat. Add thinly sliced onions and ½ teaspoon salt. Cook slowly, stirring occasionally, for 30–35 minutes until onions are golden brown and jammy.
- Add Garlic: Stir in minced garlic and cook for 1–2 minutes until fragrant. Remove skillet from heat and allow onion mixture to cool slightly.
- Prepare Dip Base: In a mixing bowl, combine softened cream cheese, sour cream, and 1½ cups of shredded Gruyere cheese. Stir until smooth and well blended.
- Mix in Onions and Seasonings: Fold the caramelized onions, fresh thyme, remaining ½ teaspoon salt, and black pepper into the cheese mixture thoroughly.
- Assemble the Dip: Transfer the mixture into a greased baking dish, smoothing the top. Sprinkle the reserved ½ cup of Gruyere cheese and Parmesan cheese (if using) evenly over the dip.
- Bake the Dip: Preheat your oven to 375°F (190°C). Bake for 20–25 minutes until the dip is hot, bubbly, and topped with a golden crust.
- Serve and Garnish: Remove from oven, garnish with fresh thyme or parsley. Serve warm with bread, crackers, chips, or fresh vegetables for dipping.
Notes
- Use olive oil instead of butter for a dairy-free option, though it slightly changes flavor.
- Caramelizing onions slowly is key for best flavor; don’t rush this step by increasing heat.
- Gruyere cheese adds a nutty, creamy texture but can be substituted with Swiss cheese if needed.
- The dip can be prepared ahead up to the assembly step, then baked just before serving.
- For a tangier dip, substitute sour cream with mayonnaise.
- Leftovers keep well refrigerated for up to 3 days and reheat nicely in the oven or microwave.
