Ingredients

Cauliflower and Seasonings

  • 1 medium head cauliflower, cut into florets (about 8 cups)
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 teaspoons paprika
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper

Additional Toppings

  • 3 garlic cloves, minced
  • 2 to 3 tablespoons grated Parmesan cheese
  • Juice of 1/2 lemon
  • 2 tablespoons finely chopped fresh parsley


Instructions

  1. Preheat Oven and Prepare Cauliflower: Place a large rimmed baking sheet on the center rack of your oven and preheat it to 450ºF. Meanwhile, cut the cauliflower into small florets and transfer them to a large bowl.
  2. Season Cauliflower: Toss the cauliflower florets with olive oil, paprika, kosher salt, and cracked black pepper until evenly coated.
  3. Roast Cauliflower: Spread the seasoned cauliflower in a single layer on the preheated baking sheet, making sure not to overcrowd the florets. Roast for 20 to 25 minutes, tossing once midway through, until the florets are tender and lightly charred.
  4. Add Parmesan and Garlic: Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese and minced garlic over the cauliflower. Return it to the oven and roast for an additional 5 minutes to allow the cheese to melt and garlic to infuse.
  5. Finish and Garnish: Remove from oven, spritz with fresh lemon juice, and sprinkle finely chopped fresh parsley on top before serving.
