Description

This Peach Salsa is a refreshing and flavorful twist on traditional salsa. The sweetness of ripe peaches is perfectly balanced with the tangy and spicy ingredients, making it a delightful addition to your summer meals.


Ingredients

3 medium-size fresh peaches (about 1 1/4 lb. total), pitted and diced

1/2 cup finely chopped red onion (from 1 onion)

1/2 cup quartered multicolored cherry tomatoes

1/4 cup packed chopped fresh cilantro leaves

1/2 small serrano chile, cut into thin rings

1 tsp. grated lime zest plus 2 Tbsp. fresh lime juice (from 1 lime)

1 tsp. kosher salt

1/4 tsp. chili powder


Instructions

  1. Combine the diced peaches, chopped red onion, quartered cherry tomatoes, cilantro, serrano chile, lime zest, lime juice, salt, and chili powder in a medium bowl.
  2. Stir everything together well.
  3. Let the salsa stand at room temperature for 5 minutes before serving, stirring occasionally. This resting time helps the flavors meld together and the juices to release.

Notes

  • If peaches aren’t in season, nectarines or plums can be used as substitutes.
  • You can swap the serrano chile for a milder or spicier variety, depending on your preference.
  • If cilantro isn’t your thing, parsley works well as a substitute.
  • For best results, enjoy the salsa fresh. Store leftovers in an airtight container in the fridge for up to 2-3 days.
