Ingredients
3 medium-size fresh peaches (about 1 1/4 lb. total), pitted and diced
1/2 cup finely chopped red onion (from 1 onion)
1/2 cup quartered multicolored cherry tomatoes
1/4 cup packed chopped fresh cilantro leaves
1/2 small serrano chile, cut into thin rings
1 tsp. grated lime zest plus 2 Tbsp. fresh lime juice (from 1 lime)
1 tsp. kosher salt
1/4 tsp. chili powder
Instructions
- Combine the diced peaches, chopped red onion, quartered cherry tomatoes, cilantro, serrano chile, lime zest, lime juice, salt, and chili powder in a medium bowl.
- Stir everything together well.
- Let the salsa stand at room temperature for 5 minutes before serving, stirring occasionally. This resting time helps the flavors meld together and the juices to release.
Notes
- If peaches aren’t in season, nectarines or plums can be used as substitutes.
- You can swap the serrano chile for a milder or spicier variety, depending on your preference.
- If cilantro isn’t your thing, parsley works well as a substitute.
