Description

Pigs in a Blanket are a delightful breakfast treat featuring cooked breakfast sausage links wrapped in a soft, fluffy pancake batter. The pancakes are cooked on a skillet until golden and then rolled around the sausages, creating a perfect combination of savory sausage and sweet pancake, ideal for brunch or a hearty breakfast.

Ingredients

Sausage

  • 12 cooked breakfast sausage links

Pancake Batter

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 ⅓ cups buttermilk
  • 1 large egg (well beaten)
  • 4 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract

Instructions

  1. Cook the Sausages: Follow the cooking instructions on the sausage package to fully cook the breakfast sausage links. Once cooked, set them aside to cool slightly.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine sea salt until well combined.
  3. Combine Wet Ingredients: In a separate small bowl, whisk together the buttermilk, well-beaten egg, melted unsalted butter, and vanilla extract to create the wet mixture.
  4. Make the Batter: Pour the wet ingredients into the dry ingredient bowl and stir gently until just combined. Let the batter rest for 5 minutes to allow baking powder to activate and the batter to thicken slightly.
  5. Heat the Skillet: Place a large non-stick skillet over medium heat and let it warm up. Lightly spray the surface with cooking spray to prevent sticking.
  6. Cook Pancakes: Scoop about 3 tablespoons of batter into the skillet and gently spread the batter out. Cook for 2 to 3 minutes or until bubbles begin to form on the surface and the bottom turns golden brown. Flip the pancake and cook an additional 2 to 3 minutes until golden brown on the other side.
  7. Wrap the Sausages: Place the cooked pancake on a plate and immediately place a sausage link in the center. Carefully roll the pancake around the sausage, positioning it seam side down to keep it sealed.
  8. Repeat Process: Continue cooking the remaining pancakes and wrapping each sausage link until all 12 are prepared.
  9. Serve: Arrange the pigs in a blanket on a serving plate. Serve warm with syrup poured over the top or with a small bowl of syrup for dipping.

Notes

  • Use fully cooked sausage links to simplify preparation and reduce cooking time.
  • Resting the batter before cooking improves pancake texture and fluffiness.
  • Cooking pancakes on medium heat prevents burning while allowing thorough cooking.
  • Serve with maple syrup or your favorite pancake toppings for added flavor.
  • For a healthier option, consider using turkey sausage or low-fat sausage links.
