Ingredients
8 whole Nilla wafer cookies
8 ounce package cream cheese, softened
20 ounce can crushed pineapple, drained and squeezed of its liquid
1/2 cup powdered sugar
1 teaspoon vanilla
Nilla wafers, for serving
Instructions
- Blend the Nilla wafers in a food processor until finely ground.
- In a medium bowl, use a handheld mixer to beat together the cream cheese, powdered sugar, pineapple, Nilla wafer crumbs, and vanilla until well combined.
- Cover the dip and chill in the refrigerator for at least one hour.
- Before serving, let the dip soften slightly at room temperature.
- Serve with extra Nilla wafers for dipping and enjoy!

- If using fresh pineapple, chop it finely and drain it well to avoid excess moisture.
