Description

These Quick Blender Crepes are an easy and elegant breakfast treat. Made in just minutes using a blender, these crepes are smooth, delicate, and perfect for any filling—sweet or savory. Whether you’re enjoying them with fresh fruit, Nutella, or even savory ingredients, these crepes are sure to impress!


Ingredients

2 large eggs

¾ cup milk

½ cup water

1 cup all-purpose flour

1 tbsp sugar

3 tbsp butter (melted)

1 tsp vanilla extract (optional)

For cooking: Butter or cooking spray


Instructions

Blend the Batter: Place the eggs, milk, water, vanilla extract, sugar, melted butter, and flour in a blender. Blend until smooth.

Refrigerate the Batter: Transfer the batter to a bowl, cover with plastic wrap, and refrigerate for at least 1 hour or up to overnight. This helps the crepes become more tender.

Cook the Crepes: Heat a small (about 8-inch) pan over medium heat. Add butter or cooking spray to coat. Pour about 3 tbsp of batter (¾ of a ¼ measuring cup) into the center of the pan, swirling to spread evenly.

Flip the Crepes: Cook for about 30 seconds until the edges lift, then flip and cook for an additional 10 seconds.

Cool and Stack: Transfer the crepe to a cutting board or clean surface and allow it to cool before stacking. Repeat with the remaining batter.

Notes

Savory Option: To make savory crepes, omit the sugar and vanilla extract from the batter.

Storage: Stack crepes once they’ve cooled. Store in the fridge for up to 2 days or freeze them for longer storage. Just reheat on a pan or in the microwave.
