Description

A wholesome, no-bake treat that brings the cozy flavors of traditional carrot cake into a clean, raw, and vegan bite-sized dessert.

Ingredients

1 1/2 cups raw cashews (soaked for 4 hours or overnight)

1/2 cup plant-based milk

2 tbsp coconut oil

2 tbsp maple syrup

1 tsp vanilla extract

2 tbsp lemon juice

1/4 tsp salt

2 cups raw almonds or 1 1/2 cups almond flour

1 cup shredded coconut

1 cup shredded carrot

1/2 cup maple syrup

2 tbsp vanilla extract

1 tsp ground cinnamon

Pinch of nutmeg

Zest of 1 orange

1/2 tsp ground ginger

Instructions

  1. Blend all frosting ingredients in a food processor or blender until smooth and creamy.
  2. Line an 8×8 inch baking pan with parchment paper.
  3. If using raw almonds, process them into a flour-like consistency.
  4. Add the rest of the carrot cake ingredients (except shredded carrot) to the processor and pulse until a sticky dough forms.
  5. Transfer the mixture to a bowl and fold in the shredded carrot until evenly combined.
  6. Press the carrot cake mixture into the lined baking pan in an even layer.
  7. Spread the cashew frosting evenly over the top.
  8. Freeze for 3–4 hours, or until the frosting feels semi-firm to the touch.
  9. Remove from the freezer, slice into squares, and store in the fridge or freezer.
  10. Serve chilled. If frozen, let them thaw for about 30 minutes before eating.
