Description

This delightful Sugar Cookies recipe features a tender, rich dough made with butter and cream cheese, enhanced by cocoa powder and a touch of red food coloring for a festive look. Perfectly soft with a hint of chocolate and a smooth vanilla flavor, these cookies are easy to prepare and ideal for decorating with royal icing.

Ingredients

Wet Ingredients

  • 1 cup unsalted butter (2 sticks)
  • 4 ounces cream cheese (half a brick)
  • 1 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 tablespoon red liquid food coloring

Dry Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 375 degrees Fahrenheit. Line baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Mix Butter, Cream Cheese, and Sugar: In a large mixing bowl, combine the unsalted butter, cream cheese, and granulated sugar. Beat on medium-low speed until the mixture is smooth, about one minute.
  3. Add Egg Yolk, Vanilla, and Food Coloring: Add the egg yolk, vanilla extract, and red food coloring to the bowl. Mix on medium speed until all ingredients are fully combined.
  4. Add Dry Ingredients: Scrape the bottom and sides of the bowl with a silicone spatula to incorporate all ingredients. Then add the flour, cocoa powder, cornstarch, and kosher salt to the mixture.
  5. Form the Dough: Mix on medium-low speed until a stiff dough forms, approximately 30 seconds to one minute. The dough should come together into a ball and cleanly lift away from the bowl’s sides. If it appears too sticky, gradually add a little more flour until it reaches the right consistency.
  6. Roll Out the Dough: Place the dough between two sheets of parchment paper and roll it out to a thickness of 3/16 inch, using rolling pin rings if available to ensure even thickness.
  7. Cut Shapes: Remove the top parchment sheet, then use a 3-inch heart-shaped cookie cutter to cut out cookie shapes from the dough.
  8. Transfer to Baking Sheets: Carefully peel the cookies from the bottom parchment sheet and place them on the prepared baking sheets, spaced apart to allow slight spreading.
  9. Bake the Cookies: Bake in the preheated oven for 12 to 16 minutes, or until the edges are set but the centers remain slightly soft to maintain tenderness.
  10. Cool and Decorate: Allow the cookies to cool completely on a wire rack before decorating with royal icing as desired.

Notes

  • For even thickness, using rolling pin rings is highly recommended to avoid over- or under-rolling the dough.
  • Make sure not to overbake the cookies; they should be soft in the center when taken out to maintain a tender texture.
  • If the dough feels sticky, add flour gradually, but avoid adding too much to prevent dry cookies.
  • Royal icing complements these cookies beautifully and enhances their presentation, especially for festive occasions.
