Description

Reuben Tacos are a creative fusion dish combining the classic flavors of a Reuben sandwich with the fun, handheld convenience of tacos. Featuring tender corned beef, melty Swiss cheese, tangy sauerkraut, and a zesty Russian dressing, these tacos are baked to perfection and make an easy, flavorful meal or appetizer.


Ingredients

Russian Dressing

  • ½ cup mayonnaise
  • 3 tablespoons ketchup (or ketchup-style chili sauce)
  • 1 tablespoon prepared horseradish
  • 1 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • Salt, to taste

Reuben Tacos

  • 10 8-inch flour taco tortillas
  • 1 cup Russian dressing (prepared from above)
  • 1 pound leftover corned beef, diced
  • 1 cup shredded Swiss cheese
  • 1 cup sauerkraut, drained very well
  • Fresh dill, optional for garnish


Instructions

  1. Prepare the Russian Dressing: In a small bowl, combine mayonnaise, ketchup or ketchup-style chili sauce, prepared horseradish, onion powder, Worcestershire sauce, and salt to taste. Stir well until all ingredients are fully blended. Chill the dressing until ready to use to let the flavors meld.
  2. Preheat the Oven: Set your oven to 350°F (175°C) to warm up while you assemble the tacos.
  3. Assemble the Tacos: Lay out the 8-inch flour tortillas flat on a baking sheet. Spread approximately 2 tablespoons of the prepared Russian dressing down the center of each tortilla evenly. Then, layer evenly on top diced corned beef and shredded Swiss cheese over the dressing in each tortilla.
  4. Bake the Tacos: Place the baking sheet in the preheated oven. Bake for 5 to 8 minutes, or until the corned beef is heated through and the Swiss cheese has melted nicely.
  5. Add the Finishing Touches: Remove the tacos from the oven and top each with drained sauerkraut. Garnish with a pinch of fresh dill if desired. Serve your Reuben Tacos warm for the best flavor and texture.
