Description

Rich, chewy, and decadently fudgy chocolate brownies with a signature shiny top. Simple to make with pantry staples and endlessly customizable.


Ingredients

200g dark chocolate (eating quality)

30g cocoa powder (sifted)

175g butter (salted or unsalted)

100g plain flour (sifted)

3 large eggs (room temperature)

250g caster or granulated sugar


Instructions

  1. Preheat the oven to 160 °C (325 °F) and line a 23 cm (9″) square metal pan with parchment paper.
  2. Melt the dark chocolate and butter together gently in the microwave or over a bain-marie, stirring regularly.
  3. In a separate bowl, whisk the eggs and sugar until light, fluffy, and able to hold ribbons (about 5 minutes).
  4. Slowly fold the melted chocolate mixture into the eggs.
  5. Sift in the cocoa powder and flour, folding gently until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30 minutes, until the top is glossy and a toothpick inserted comes out with moist crumbs.
  8. Let cool completely before slicing into squares.

  • Do not overmix the batter to maintain fudgy texture.
