Instructions

  1. Prepare the slow cooker: Place the chicken thighs, minced garlic, matchstick carrots, sliced red bell pepper, sugar snap peas, and chopped scallions into the slow cooker bowl.
  2. Add liquids and seasoning: Pour in the chicken stock, soy sauce, and brown sugar. Add one packet of chicken ramen seasoning to enhance the flavor of the broth.
  3. Stir ingredients: Mix all the ingredients gently to distribute the seasoning and combine flavors evenly.
  4. Cook chicken and vegetables: Cover the slow cooker and cook on high for 4 hours or on low for 6 hours, until the chicken is tender and cooked through.
  5. Add ramen noodles: About 30 minutes before serving, add the ramen noodle blocks (without seasoning packets) to the slow cooker. Cover again and stir every 10 minutes to prevent noodles from sticking, allowing them to cook thoroughly.
  6. Prepare soft boiled eggs: Bring a pot of water to a boil. Carefully place eggs in the boiling water and cook for 7 minutes. Immediately transfer eggs to cold water to stop cooking, then peel and slice for topping.
