S’mores Cookie Bars bring the beloved s’mores flavor combination into a delicious, portable dessert. Featuring a chewy graham cracker cookie base, gooey marshmallow creme, and chocolate chips, these bars capture all the flavors and textures of classic s’mores in an easy-to-make form.
Ingredients
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 cup graham cracker crumbs
1/2 teaspoon baking powder
1/2 teaspoon salt
1 jar (about 7 oz) marshmallow creme
1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or spray with non-stick spray.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, graham cracker crumbs, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until combined. The dough will be a little sticky.
- Press about 2/3 of the cookie dough evenly into the bottom of the prepared baking pan.
- Spread a generous layer of marshmallow creme over the cookie dough.
- Sprinkle chocolate chips evenly on top of the marshmallow creme.
- Flatten the remaining cookie dough and layer it gently on top of the chocolate chips. It doesn’t need to cover completely – let the marshmallow and chocolate peek through!
- Bake for 25-30 minutes, or until the top is golden brown and the bars are set.
- Allow the bars to cool completely before cutting into squares and serving.
Notes
- Add nuts: Stir in some chopped nuts like walnuts or pecans for a crunchy contrast to the soft bars.
- Use different chocolate: Swap the chocolate chips for your favorite type of chocolate, such as milk chocolate, dark chocolate, or white chocolate.
- Gluten-free version: Use gluten-free graham cracker crumbs and substitute gluten-free flour in place of the all-purpose flour.
- Mini version: Make individual-sized s’mores bars by using a muffin tin. Adjust the baking time to around 15-20 minutes.
- Storage: Store S’mores Cookie Bars in an airtight container at room temperature for up to 3-4 days.
- Freezing: These cookie bars freeze well! Wrap them tightly in plastic wrap and aluminum foil, and freeze for up to 3 months. Thaw at room temperature before serving.
- Reheating: To bring back that fresh-baked gooeyness, reheat individual bars in the microwave for 10-15 seconds.
