Ingredients
Chicken
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1 to 1.5-inch chunks
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder (optional)
- ½ teaspoon smoked paprika (optional)
- 8-10 skewers (wooden or metal; soak wooden skewers in water if using)
Bang Bang Sauce
- ½ cup mayonnaise (or ¼ cup mayo + ¼ cup Greek yogurt for a lighter option)
- 2 tablespoons sriracha (adjust to taste)
- 1 tablespoon honey (or sugar)
- 1 tablespoon rice vinegar (or lime juice)
- 1 tablespoon chopped green onions
- 1 teaspoon sesame seeds
Instructions
- Prep the chicken: Cut the chicken into 1 to 1.5-inch chunks. Pat dry with paper towels to remove excess moisture for better searing.
- Season the chicken: Place the chicken chunks in a bowl and season evenly with salt, black pepper, garlic powder, and smoked paprika. Toss the chicken with olive oil until well-coated to help retain moisture and enhance flavor.
- Make the sauce: In a small bowl, combine mayonnaise, sriracha, honey, and rice vinegar. Whisk together until the mixture is smooth and creamy. Adjust the spiciness and sweetness to your taste preference.
- Assemble the skewers: Thread the seasoned chicken pieces onto the skewers. If desired, alternate the chicken with vegetables of your choice for added flavor and texture.
- Preheat the grill: Heat your grill to medium-high heat to ensure it is hot enough to cook the chicken properly and create charred grill marks.
- Grill the chicken: Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally. Grill until the chicken is fully cooked through and slightly charred on the outside.
- Brush with sauce: During the last few minutes of grilling, brush the skewers generously with the bang bang sauce to add flavor and moisture. Alternatively, you can drizzle the sauce over the chicken after removing from the grill.
- Serve: Remove the skewers from the grill and garnish with chopped green onions and sesame seeds for a fresh, nutty finish. Serve extra sauce on the side for dipping. Enjoy immediately for best taste and texture.
Notes
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
- You can substitute chicken breasts with thighs for juicier skewers.
- Adjust the Sriracha and honey amount to customize the sauce’s heat and sweetness.
- Serve with a side salad or grilled vegetables for a complete meal.
- Leftover skewers can be stored in an airtight container in the refrigerator for up to 2 days.
