Description

A vibrant and creamy Jalapeno Sauce made by simmering fresh jalapeno peppers, onion, and garlic before blending with avocado oil and lime juice. Perfect for adding a flavorful kick to any dish, this sauce is smooth, tangy, and mildly spicy.


Ingredients

Vegetables

  • 16 fresh jalapeno peppers
  • 1 white onion
  • 8 garlic cloves (in husks)

Other Ingredients

  • 2 teaspoons kosher salt (divided)
  • ½ cup avocado oil (or any fresh flavorless oil)
  • 1 ½ tablespoons fresh lime juice (about 1 whole lime)


Instructions

  1. Prepare the boiling water: Fill a large stockpot halfway with water, add 1 teaspoon kosher salt, and heat over high heat until it begins to boil.
  2. Prepare the vegetables: Peel the white onion and quarter it, then place it in a bowl. Wash the jalapeno peppers thoroughly and add them to the bowl with the onion. Break apart 8 garlic cloves from a large bulb, keeping their husks on, and add them to the bowl as well.
  3. Cook the vegetables: Carefully pour all the vegetables into the boiling salted water. Reduce the heat to maintain a gentle simmer and cook for approximately 20 minutes, until the jalapenos and onion are soft, the peppers turn an army green color, and the garlic cloves fall free from their husks.
  4. Drain and blend: Drain the cooked vegetables and transfer them to a blender bowl. Add the remaining 2 teaspoons kosher salt (start with 1 teaspoon if using table salt), ½ cup avocado oil, and 1 ½ tablespoons fresh lime juice.
  5. Blend the sauce: Secure the blender lid and blend on high for 1 full minute until creamy and smooth. Taste and adjust seasoning as needed by adding more salt or lime juice. If the puree is too thick, add water 1 tablespoon at a time until the blender runs smoothly.
  6. Store the sauce: Pour the jalapeno sauce into squeeze bottles or airtight containers and chill in the refrigerator. The sauce can be stored for up to 10 days.
