Description

These savory spinach and feta puff pastry twists are a delicious and elegant appetizer or snack. Combining flaky puff pastry with a creamy, flavorful filling made from sautéed spinach, tangy feta, and smooth cream cheese, seasoned with garlic and oregano, then baked to golden perfection. Perfect for parties, gatherings, or a tasty treat any time.

Ingredients

Filling

  • 1 cup fresh spinach (chopped and lightly sautéed, or thawed frozen spinach squeezed dry)
  • ½ cup feta cheese (crumbled)
  • ¼ cup cream cheese (softened)
  • 1 garlic clove (minced)
  • ½ tsp dried oregano (or Italian seasoning)
  • ¼ tsp black pepper
  • Pinch of salt (optional, since feta is salty)

Dough & Topping

  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg (beaten, for egg wash)
  • Coarse sea salt (for sprinkling, optional)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the chopped and lightly sautéed spinach with crumbled feta cheese, softened cream cheese, minced garlic, dried oregano, black pepper, and a pinch of salt if desired. Mix everything well until the filling is creamy and evenly combined.
  2. Prepare the puff pastry: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll out the thawed puff pastry sheet slightly to smooth any creases, preparing it for filling.
  3. Assemble the twists: Spread the spinach and feta mixture evenly over half of the puff pastry sheet. Then fold the pastry sheet over the filling to cover it completely. Using a sharp knife, cut the folded pastry into strips about 1 inch wide.
  4. Shape the twists: Take each strip and gently twist it several times to create a spiral effect. Lay each twisted strip carefully onto the prepared baking sheet, spacing them slightly apart.
  5. Add finishing touches: Brush each twist generously with the beaten egg wash which will give them a beautiful golden shine once baked. Optionally, sprinkle coarse sea salt over the twists to enhance the flavor and add a bit of texture.
  6. Bake: Place the baking sheet in the preheated oven and bake the twists for 18 to 22 minutes, or until they are puffed, flaky, and have turned a deep golden brown.
  7. Serve: Allow the twists to cool for a few minutes before serving. Enjoy these warm as a delightful appetizer or snack.

Notes

  • You can substitute frozen spinach for fresh, just ensure it is thawed and well-drained to prevent sogginess.
  • If you want a vegetarian option, this recipe already fits that category.
  • For extra flavor, add a pinch of crushed red pepper flakes in the filling.
  • Leftover twists can be reheated in the oven to regain their crispiness.
  • Make sure the puff pastry is cold before rolling to ensure it puffs well during baking.
