Ingredients

Dry Ingredients

  • 2 1/2 cups all purpose flour (300 grams)

Wet Ingredients

  • 4 tablespoons unsalted butter, melted and cooled (56.5 grams)
  • 3/4 cup sugar (148.5 grams)
  • 3/4 cup yogurt (170.25 grams)
  • 2 eggs, beaten
  • 3 very ripe bananas, mashed well
  • 2 teaspoons vanilla extract

Additional Ingredients

  • 1 cup fresh diced strawberries (136.1 grams)


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Spray a 9 by 5 inch bread pan with cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt to combine evenly.
  3. Combine Wet Ingredients: In a large bowl, whisk melted butter and sugar until well mixed. Then add yogurt, beaten eggs, mashed bananas, and vanilla extract, mixing thoroughly.
  4. Combine Wet and Dry Mixtures: Gently fold the flour mixture into the wet ingredients until just combined. Take care not to overmix to keep the bread tender.
  5. Add Strawberries: Carefully stir in the fresh diced strawberries. The batter will be very thick at this point.
  6. Fill Pan and Bake: Pour the batter into the prepared bread pan. Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs (63 minutes in this case).
  7. Cool Bread: Let the bread cool in the pan for 10 minutes. Then remove and transfer to a wire rack to cool completely for about an hour before slicing.
