Description

Ingredients

Crust and Crumble Topping

½ cup unsalted butter, melted

1 cup all-purpose flour

¾ cup old-fashioned oats

½ cup granulated sugar

¼ cup light brown sugar, packed

½ teaspoon salt, or to taste

Strawberry Layer

2 cups coarsely chopped fresh strawberries

⅓ cup granulated sugar

2 tablespoons lemon juice

2 teaspoons cornstarch


Instructions

  1. Preheat the oven to 350°F. Line an 8-inch square pan with aluminum foil and spray with cooking spray; set aside.
  2. In a large, microwave-safe bowl, melt the butter by microwaving it for about 1 minute on high power.
  3. Add the flour, oats, granulated sugar, brown sugar, and salt. Stir until the mixture is well combined and crumbly.
  4. Set aside 1 heaping cup of the crumble mixture to use as the topping.
  5. Press the remaining crumble mixture firmly into the prepared pan to form an even, smooth crust.
  6. For the strawberry layer, combine the chopped strawberries, granulated sugar, lemon juice, and cornstarch. Stir until the strawberries are coated.
  7. Spread the strawberry mixture evenly over the crust.
  8. Sprinkle the reserved crumble mixture over the strawberry layer.
  9. Bake for 40–45 minutes, or until the topping is golden brown and the strawberry filling is bubbling.
  10. Allow the bars to cool completely in the pan before cutting into squares.
