Ingredients

For the Crust:

2 cups graham cracker crumbs

½ cup unsalted butter (melted)

1 ½ cups heavy whipping cream

1 (3 oz) package strawberry gelatin

1 ½ cups crushed Golden Oreos

4 tbsp unsalted butter (melted)

Instructions

Prepare the Crust:
In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Chill in the refrigerator for 10-15 minutes.

Make the Cheesecake Filling:
Beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined. Pour the filling onto the chilled crust and spread evenly. Refrigerate for at least 4 hours or overnight to set.

Prepare the Strawberry Crunch Topping:
In a bowl, mix the crushed Golden Oreos, strawberry gelatin powder, and melted butter. Spread the mixture on a parchment-lined baking sheet and bake at 350°F for 8-10 minutes, or until crunchy. Let it cool completely.

Assemble the Cheesecake:
Once the cheesecake has set, sprinkle the cooled strawberry crunch topping over the top, gently pressing it down to adhere to the cheesecake.
