Ingredients
4 Boneless, skinless chicken thighs
1 cup Rice (long-grain white or brown rice)
1/4 cup Honey
1/2 cup BBQ sauce (your favorite kind)
2 tbsp Soy sauce
3 cloves Garlic (minced)
Instructions
- Preheat Your Oven: Set your oven to 375°F (190°C).
- Prepare the Sauce: In a large mixing bowl, whisk together honey, BBQ sauce, soy sauce, and minced garlic until smooth.
- Grease the Baking Dish: Lightly grease a baking dish with oil or cooking spray.
- Assemble the Dish: Toss the chicken thighs in half of the honey BBQ sauce and place them in the prepared baking dish. Pour the remaining sauce over the top.
- Bake the Chicken: Place the dish in the oven and bake for 35-40 minutes, basting with sauce halfway through. The chicken is done when it’s cooked through and the sauce is sticky and caramelized.
- Rest the Chicken: Remove the chicken from the oven and let it rest for 5 minutes.
- Serve: Spoon rice onto plates, top with chicken thighs, and drizzle with remaining sauce.
Notes
- For a spicier version, add cayenne pepper, chili flakes, or hot sauce to the glaze.
- Brown rice can be used for a nuttier flavor, but it requires a longer cooking time.
- Use tamari or coconut aminos for a gluten-free alternative to soy sauce.
