Ingredients
Meat and Bean Mixture
- 1 pound lean ground beef
- 1 (1 oz) packet taco seasoning
- 1/4 cup water or beef broth
- 1 cup refried beans (optional)
Rice and Tortilla
- 2 cups cooked Mexican rice (or instant Mexican rice)
- 4 burrito-sized flour tortillas
Fillings and Toppings
- 2 cups Fritos or Doritos
- 1 cup cheese dip (warmed, like Tostitos)
- 1 cup shredded Mexican cheese blend
- 1/2 cup sour cream
- Salsa (optional, for serving)
Instructions
- Cook the Beef: In a sauté pan over medium heat, cook the ground beef, breaking apart with a spoon until fully browned and no pink remains. Stir in the taco seasoning packet and 1/4 cup of water or beef broth. Cook for an additional minute, then stir in the refried beans. If the mixture is too thick, add a bit more water to reach your desired consistency.
- Prepare Rice and Tortillas: Cook your instant Mexican rice according to package instructions or warm leftover Mexican rice. Heat the flour tortillas in the microwave for 30 seconds to make them pliable.
- Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a couple of tablespoons of the beef and bean mixture into the center, followed by a couple of tablespoons of cooked Mexican rice. Add a layer of Fritos or Doritos for crunch, a large spoonful of warmed cheese dip, some shredded Mexican cheese blend, and a spoonful of sour cream. Fold the sides over the filling and then tightly roll the tortilla from one end to form a burrito. Repeat with remaining ingredients.
- Toast (Optional) and Serve: You can serve the burritos immediately as they are or place them seam side down in a pan over medium heat to toast until the outside is crisp and golden, about 2-3 minutes per side. Serve hot, with salsa on the side if desired.
Notes
- For a smoother filling, use beef broth instead of water when cooking the beef mixture.
- Refried beans are optional but add creaminess and texture.
- Warming tortillas helps prevent cracking when rolling.
- Use Fritos for a corn chip crunch or Doritos for a cheesy flavor boost.
- Cheese dip should be warmed slightly for easier spreading.
- To make it vegetarian, substitute the beef with seasoned cooked lentils or plant-based ground meat and omit the cheese dip or use a vegan version.
- Leftover burritos can be wrapped in foil and reheated in the oven at 350°F for 15 minutes.
