Ingredients
Meat Mixture
- 1 pound ground beef
- 1 medium yellow onion, diced
- 2 teaspoons minced garlic
- ¼ cup taco seasoning
- ½ cup water
- 14.5 oz. fire-roasted diced tomatoes (do not drain)
- 4 oz. can green chiles
- 15 oz. can black beans, drained and rinsed
Assembly & Toppings
- 18 corn tortillas
- 6 cups shredded cheese (jack and cheddar blend)
- 1-2 tomatoes, diced for garnish
- 1 green onion, sliced for garnish
- Sour cream for serving
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and spray a 9×13 inch casserole dish with non-stick cooking spray to prepare it for assembling the layers.
- Cook Beef and Onion: In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onions have softened.
- Sauté Garlic: Add the minced garlic to the skillet and sauté for an additional 1 to 2 minutes until fragrant.
- Add Seasoning: Stir in the taco seasoning and water, cooking over medium heat until everything is well combined and heated through.
- Mix in Vegetables and Beans: Add the fire-roasted diced tomatoes (with juices), green chiles, and black beans into the meat mixture. Stir and heat the mixture thoroughly.
- Layer Tortillas: Line the bottom of the prepared casserole dish with 6 corn tortillas, overlapping slightly to cover the surface completely.
- Add Meat and Cheese Layers: Spread one-third of the meat mixture evenly over the tortillas. Sprinkle 2 cups of the shredded cheese over the meat layer.
- Repeat Layers: Continue layering with tortillas, then meat mixture, and cheese, forming a total of three layers.
- Bake: Cover the dish with aluminum foil and bake for 30 to 40 minutes, or until the casserole is bubbly and the cheese is melted and slightly golden.
- Garnish and Serve: Remove from oven and garnish with the diced tomatoes and sliced green onions. Allow the casserole to rest for 10 minutes before slicing for easier serving. Serve with sour cream on the side.
Notes
- You can substitute ground turkey or chicken for the beef for a leaner option.
- Adjust the amount of taco seasoning according to your spice preference.
- Use fresh tortillas for better flexibility and texture.
- Letting the casserole rest before slicing helps it hold its shape.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
