Ingredients
For the Cookies:
½ cup butter (room temperature)
⅓ cup olive oil (light flavor)
½ cup sugar
⅓ cup powdered sugar
1 large egg
2 tsp vanilla extract
2 cups all-purpose/plain flour
½ tsp baking soda
¼ tsp salt (omit if using salted butter)
1 chai tea bag (open and pour in the tea leaves)
For the Icing:
1 cup powdered sugar
2 tbsp whole milk (add a little at a time)
Dash of nutmeg
Dash of cinnamon
Instructions
Beat together the butter and olive oil until smooth.
Add sugar, powdered sugar, egg, and vanilla extract. Mix well.
Stir in flour, baking soda, salt, and the contents of the chai tea bag.
Chill the dough for about 1 hour or overnight.
Preheat your oven to 350°F (175°C).
Roll dough into approximately 2-inch balls and place them on a greased cookie sheet (8 cookies per tray).
Gently press the cookies down to form an even shape.
Bake for about 9 minutes, or until slightly golden around the edges. Avoid letting them burn.
Cool the cookies on a wire rack for 10-15 minutes.
For the icing, mix powdered sugar, a little milk at a time, nutmeg, and cinnamon. Stir until smooth.
Frost the cookies with the icing and sprinkle with extra cinnamon if desired.
Allow the icing to harden completely before serving or plating.

Notes
You can use either salted or unsalted butter. If you use salted butter, omit the salt in the dough.
