Ingredients

6 large apples (Granny Smith, Pink Lady, or Honeycrisp)

⅔ cup sugar

23 tablespoons all-purpose flour

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

½ teaspoon ground cinnamon

⅛ teaspoon salt

1 recipe double pie crust

1 large egg (for egg wash)

1 tablespoon milk (for egg wash)

Raw sugar (for sprinkling)


Instructions

  1. Peel, core, and slice the apples into ¼-inch thick slices. Place them in a large bowl, add lemon juice and zest.
  2. Sprinkle sugar, flour, cinnamon, and salt over the apples, and mix until evenly coated.
  3. Let the apple mixture sit for 15 minutes to allow juices to form and apples to become tender.
  4. Roll out the bottom pie crust to 12 inches and transfer it to a 9-inch pie plate. Let the dough hang over the edges.
  5. Add the apple filling to the crust and dot the top with small pads of butter.
  6. If making a lattice crust, roll out and cut dough into strips. Weave strips across the pie as described above. If not, cover the pie with the second crust and trim edges.
  7. Whisk egg and milk together for the egg wash, then brush over the top crust. Sprinkle raw sugar on top.
  8. Preheat the oven to 425°F. Bake for 15 minutes, then lower temperature to 350°F and bake for another 40 minutes, until the juices are bubbling and apples are tender.
