Ingredients
6 large apples (Granny Smith, Pink Lady, or Honeycrisp)
⅔ cup sugar
2–3 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
½ teaspoon ground cinnamon
⅛ teaspoon salt
1 recipe double pie crust
1 large egg (for egg wash)
1 tablespoon milk (for egg wash)
Raw sugar (for sprinkling)
Instructions
- Peel, core, and slice the apples into ¼-inch thick slices. Place them in a large bowl, add lemon juice and zest.
- Sprinkle sugar, flour, cinnamon, and salt over the apples, and mix until evenly coated.
- Let the apple mixture sit for 15 minutes to allow juices to form and apples to become tender.
- Roll out the bottom pie crust to 12 inches and transfer it to a 9-inch pie plate. Let the dough hang over the edges.
- Add the apple filling to the crust and dot the top with small pads of butter.
- If making a lattice crust, roll out and cut dough into strips. Weave strips across the pie as described above. If not, cover the pie with the second crust and trim edges.
- Whisk egg and milk together for the egg wash, then brush over the top crust. Sprinkle raw sugar on top.
- Preheat the oven to 425°F. Bake for 15 minutes, then lower temperature to 350°F and bake for another 40 minutes, until the juices are bubbling and apples are tender.

- For a lattice crust: Roll out dough, cut into strips, and weave across the pie.
- To avoid soggy crust, discard excess liquid from the apple mixture before assembling.
