Description

Delicious and easy-to-make Toast Muffins that transform simple bread, eggs, and milk into a sweet, cinnamon-spiced breakfast treat. Perfectly portioned in muffin tins, these golden muffins bake up moist and flavorful, ideal for serving with syrup, butter, or powdered sugar.

  • 4 eggs
  • 1 1/2 cups milk
  • 4 tbsp sugar (divided in half)
  • 1 tsp vanilla extract

Instructions

  1. Prepare Bread: Chop up the bread into bite-sized pieces and set aside to use in the batter.
  2. Prepare Muffin Tins: Spray 12 muffin tins with non-stick spray to prevent sticking.
  3. Mix Wet Ingredients: In a large bowl, mix together half of the sugar (2 tbsp), milk, eggs, and vanilla extract until well combined.
  4. Combine Bread with Wet Mix: Add the chopped bread into the wet mixture and use your hands to thoroughly mix and soak the bread pieces.
  5. Make Cinnamon Sugar Topping: In a separate bowl, combine the remaining 2 tablespoons sugar with 1 teaspoon ground cinnamon and mix well.
  6. Fill Muffin Cups (First Layer): Spoon half of the wet bread mixture evenly into the 12 muffin cups.
  7. Add Topping Layer: Sprinkle about 1/2 teaspoon of the cinnamon sugar mixture over the first layer in each muffin cup.
  8. Fill Muffin Cups (Second Layer): Spoon the remaining wet bread mixture into the muffin cups on top of the cinnamon sugar layer.
  9. Final Topping: Top each muffin with another 1/2 teaspoon of the cinnamon sugar mixture.
  10. Bake: Place muffin tins in a preheated oven at 350°F (175°C) and bake for 15 to 20 minutes until muffins are golden brown and set.
