Ingredients

Tomato Bruschetta Topping

  • 6 Roma tomatoes (1 1/2 lbs, diced)
  • 1/3 cup basil leaves (chopped)
  • 5 garlic cloves (divided, finely minced)
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Balsamic glaze (optional)

Bruschetta Toasts

  • 1 baguette
  • 3 Tbsp extra virgin olive oil (infused with 1 tsp minced garlic)
  • 1/3 cup shredded parmesan cheese


Instructions

  1. Prepare the tomato topping: Core and dice the Roma tomatoes or pulse them lightly in a food chopper. Drain any excess juice from the diced tomatoes and place them in a medium mixing bowl.
  2. Chop the basil: Stack the basil leaves and roll them tightly into a tube shape, then thinly slice across to create basil ribbons. Add these to the bowl with the tomatoes.
  3. Mix garlic and seasonings: Finely mince five garlic cloves, then mix 1 teaspoon of the minced garlic into the 3 tablespoons of olive oil and set aside. Add the remaining minced garlic to the tomato and basil mixture.
  4. Combine the topping: Stir 2 tablespoons of olive oil, 1 tablespoon balsamic vinegar, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper into the tomato mixture gently. Set aside to marinate for 30 minutes, allowing the flavors to meld.
  5. Prepare the toasts: Preheat your oven to 400°F (205°C) and position the rack in the center. Cut the baguette diagonally into 1/2 inch thick slices and arrange them evenly on a parchment-lined baking sheet.
  6. Brush and cheese the toasts: Brush both sides of each baguette slice with the garlic-infused olive oil. Sprinkle the tops with shredded parmesan cheese.
  7. Bake and broil: Bake the slices at 400°F for 5 minutes, then switch the oven to broil on high for 1 to 2 minutes until the edges turn golden brown and crispy. Watch carefully to avoid burning.
  8. Serve: Arrange the toasted baguette slices on a serving platter alongside the marinated tomato mixture. Spoon tomato topping over each toast just before serving, and drizzle with extra virgin olive oil and optional balsamic glaze for extra flavor.
