Ingredients
Tomato Bruschetta Topping
- 6 Roma tomatoes (1 1/2 lbs, diced)
- 1/3 cup basil leaves (chopped)
- 5 garlic cloves (divided)

- 2 Tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper

Bruschetta Toasts
- 1 baguette
- 3 Tbsp extra virgin olive oil
- 1/3 cup shredded parmesan cheese
Instructions
- Prepare the Tomato Bruschetta Topping: Core and dice the Roma tomatoes carefully, removing excess juice. Transfer the diced tomatoes into a medium-sized bowl for marinating.
- Chop the Basil: Stack the fresh basil leaves and roll them into a tight tube. Using a sharp knife, slice into thin ribbons to release their aroma, then add them to the bowl with the tomatoes.
- Prepare Garlic Oil and Mix Garlic into Tomatoes: Finely mince all 5 garlic cloves. Mix 1 teaspoon of the minced garlic with 3 tablespoons of extra virgin olive oil and set aside for brushing the toasts. Add the remaining minced garlic directly to the tomato and basil bowl for flavor infusion.
- Season the Tomato Mixture: Add 2 tablespoons of extra virgin olive oil, 1 tablespoon of balsamic vinegar, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper to the tomato mixture. Gently stir to combine, and allow it to marinate for 30 minutes to deepen the flavors.
- Preheat the Oven and Prepare Toasts: Preheat the oven to 400°F (204°C), placing the rack in the center. Meanwhile, slice the baguette diagonally into 1/2-inch thick slices and arrange them on a parchment-lined baking sheet.
- Brush Toasts and Add Cheese: Brush both sides of the baguette slices with the reserved garlic-infused olive oil. Sprinkle shredded Parmesan cheese evenly over the tops of the slices.

- Serve the Bruschetta: Arrange the warm toasts on a serving platter and place the marinated tomato topping in a bowl. Spoon the tomato mixture generously over the toasts just before serving, and optionally drizzle with extra virgin olive oil and balsamic glaze for added flavor.
