Description

A vibrant and fresh Tomato Bruschetta recipe featuring juicy Roma tomatoes, fragrant basil, and a hint of garlic, served on crispy, Parmesan-topped baguette toasts. Perfect as an appetizer or light snack with a burst of Mediterranean flavors.

Ingredients

Tomato Bruschetta Topping

  • 6 Roma tomatoes (1 1/2 lbs, diced)
  • 1/3 cup basil leaves (chopped)
  • 5 garlic cloves (divided)
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Balsamic glaze (optional)

Bruschetta Toasts

  • 1 baguette
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Prepare the Tomato Bruschetta Topping: Core and dice the Roma tomatoes carefully, removing excess juice. Transfer the diced tomatoes into a medium-sized bowl for marinating.
  2. Chop the Basil: Stack the fresh basil leaves and roll them into a tight tube. Using a sharp knife, slice into thin ribbons to release their aroma, then add them to the bowl with the tomatoes.
  3. Prepare Garlic Oil and Mix Garlic into Tomatoes: Finely mince all 5 garlic cloves. Mix 1 teaspoon of the minced garlic with 3 tablespoons of extra virgin olive oil and set aside for brushing the toasts. Add the remaining minced garlic directly to the tomato and basil bowl for flavor infusion.
  4. Season the Tomato Mixture: Add 2 tablespoons of extra virgin olive oil, 1 tablespoon of balsamic vinegar, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper to the tomato mixture. Gently stir to combine, and allow it to marinate for 30 minutes to deepen the flavors.
  5. Preheat the Oven and Prepare Toasts: Preheat the oven to 400°F (204°C), placing the rack in the center. Meanwhile, slice the baguette diagonally into 1/2-inch thick slices and arrange them on a parchment-lined baking sheet.
  6. Brush Toasts and Add Cheese: Brush both sides of the baguette slices with the reserved garlic-infused olive oil. Sprinkle shredded Parmesan cheese evenly over the tops of the slices.
  7. Bake and Broil the Toasts: Place the baking sheet in the oven and bake for 5 minutes at 400°F. Then switch to broil on high for 1 to 2 minutes, watching closely until the edges turn golden brown and crispy.
  8. Serve the Bruschetta: Arrange the warm toasts on a serving platter and place the marinated tomato topping in a bowl. Spoon the tomato mixture generously over the toasts just before serving, and optionally drizzle with extra virgin olive oil and balsamic glaze for added flavor.

Notes

  • Ensure to drain excess tomato juices to prevent soggy toasts.
  • Use fresh basil for the best flavor; dried basil will not provide the same aromatic quality.
  • Broiling the toasts at the end adds a perfect crisp and golden finish—keep an eye to avoid burning.
  • Balsamic glaze is optional but adds a sweet-acidic contrast enhancing the bruschetta flavors.
  • Can be prepared ahead by making the tomato topping and toasts separately, assembling just before serving.
