- 1 loaf of Trader Joe’s sun-dried tomato focaccia
Meat
- 7-ounce package deli turkey
Vegetables
- 1 large tomato, thinly sliced
- 1 handful of greens – sprouts, microgreens, spinach, etc.
- A few pieces of thinly sliced red onion
Condiments
- 1/4 cup mayo
- 1/4 cup pesto (Costco brand recommended)
Instructions
- Preheat and Toast Bread: Preheat your oven to 400 degrees Fahrenheit. Place the sun-dried tomato focaccia loaf in the oven and toast for 5-8 minutes until slightly crispy and warmed through.
- Prepare Pesto Mayo: In a small bowl, mix together the 1/4 cup of mayo and 1/4 cup of pesto until well combined to create a flavorful pesto mayo spread.
- Slice the Bread: Place the toasted focaccia loaf flat on a cutting board. Using a serrated knife, turn it sideways and slice horizontally through the center of the loaf carefully, so you keep the top piece intact with its crumbly texture. Set the top piece aside, keeping it flat.
- Build the Sandwich Layers: On the bottom half of the bread, spread a generous layer of pesto mayo. Layer the deli turkey evenly over the pesto mayo, followed by the thinly sliced tomato, a handful of greens like sprouts or spinach, and a few thin slices of red onion. Finish by dolloping additional pesto mayo on top of the greens and onions.
- Assemble and Slice: Gently place the top piece of focaccia back onto the sandwich. Press lightly to secure all ingredients. Using a large knife, cut the sandwich down the middle and then crosswise into three sections, creating six sandwich pieces. Serve immediately and enjoy your sandwich creation!
