Description
A refreshing summer salad made with juicy peaches, sweet corn, and ripe tomatoes, complemented by a tangy honey vinaigrette and crumbled feta cheese.
Ingredients
2 beefsteak tomatoes, each cut into 8 wedges
1 peach, diced (about 1 cup)
1 cup fresh corn kernels (from 2 small ears or 1 large ear)
1/4 teaspoon kosher salt
1/4 cup Honey Vinaigrette
2 ounces feta cheese, crumbled (about 1/2 cup)
1/4 teaspoon black pepper
Instructions
- In a medium bowl, combine the tomato wedges, diced peach, and fresh corn.
- Sprinkle with kosher salt and drizzle with Honey Vinaigrette.
- Toss gently to coat all ingredients with the vinaigrette.
- Divide the salad onto 4 individual plates, or serve it on one large platter.
- Top with crumbled feta cheese and sprinkle with black pepper before serving.
Notes
- If you don’t have fresh corn, frozen or edamame can be substituted.
- For a different flavor, swap feta cheese with blue cheese or ricotta salata.
- Fresh basil can be used as a garnish for added flavor and color.
