Description

A refreshing summer salad made with juicy peaches, sweet corn, and ripe tomatoes, complemented by a tangy honey vinaigrette and crumbled feta cheese.


Ingredients

2 beefsteak tomatoes, each cut into 8 wedges

1 peach, diced (about 1 cup)

1 cup fresh corn kernels (from 2 small ears or 1 large ear)

1/4 teaspoon kosher salt

1/4 cup Honey Vinaigrette

2 ounces feta cheese, crumbled (about 1/2 cup)

1/4 teaspoon black pepper


Instructions

  1. In a medium bowl, combine the tomato wedges, diced peach, and fresh corn.
  2. Sprinkle with kosher salt and drizzle with Honey Vinaigrette.
  3. Toss gently to coat all ingredients with the vinaigrette.
  4. Divide the salad onto 4 individual plates, or serve it on one large platter.
  5. Top with crumbled feta cheese and sprinkle with black pepper before serving.

Notes

  • If you don’t have fresh corn, frozen or edamame can be substituted.
  • For a different flavor, swap feta cheese with blue cheese or ricotta salata.
  • Fresh basil can be used as a garnish for added flavor and color.
