Ingredients
For the homemade pie crust:
all-purpose flour
granulated sugar
salt
chilled shortening
cold unsalted butter, cubed
ice-cold water
For the triple berry filling:
fresh raspberries
fresh blueberries
fresh blackberries
granulated sugar
fresh lemon juice
cornstarch
unsalted butter
egg white, beaten (for brushing the crust)
Instructions
- Whisk the dry ingredients for the pie dough: flour, sugar, and salt.
- Cut in the chilled shortening and cubed butter until the mixture is crumbly.
- Add ice-cold water and mix until the dough comes together.
- Divide the dough into two halves, wrap each half, and chill for at least an hour.
- Roll out one dough disk and fit it into a 9-inch pie plate. Chill again while preparing the filling.
- For the filling, heat the berries with sugar and lemon juice in a saucepan until they release their juices.
- Stir in cornstarch and cook the mixture until it thickens. Remove from heat, then stir in the butter and allow it to cool.
- Pour the cooled berry filling into the crust-lined pie plate.
- Roll out the second dough disk to create a lattice or full top crust. Crimp the edges, brush with egg white, and sprinkle with sugar.
- Bake at 400°F for 40-45 minutes, covering with foil after 25 minutes to prevent over-browning.
- Once golden and bubbling, remove from the oven and cool completely before slicing to ensure the filling sets.

- You can mix up the fruit by adding strawberries or cherries.
- If short on time, use a store-bought crust or crumble topping.
- Pie can be assembled ahead of time and kept in the fridge or frozen before baking.
