- 2 teaspoons balsamic vinegar

- 2 tablespoons blackberry preserves
Instructions
- Slice Brie Cheese: Remove the rind from the brie cheese and slice it into thin pieces to ensure it melts evenly inside the sandwich.
- Assemble Sandwich: Brush one side of a slice of bread with 1 to 2 teaspoons of extra virgin olive oil. Place the bread olive oil side down on a cast iron griddle. Drizzle the bread with balsamic vinegar, then layer the sliced brie on top. Next, drizzle one side of the other bread slice with balsamic vinegar and close the sandwich, balsamic side down, before brushing the top slice with olive oil.
- Cook Grilled Cheese: Set the stove to medium-low heat. Cook the sandwich until the bottom side is golden brown, about 5 to 7 minutes. Carefully flip it over and continue cooking the second side for another 4 to 6 minutes, until it’s golden brown and the cheese has melted thoroughly. The second side cooks faster since the pan is preheated.
- Spread Blackberry Preserves: Transfer the grilled cheese to a cutting board and carefully open the sandwich while hot. Spread the blackberry preserves evenly inside the sandwich, enhancing the sweet and tangy flavor balance.
- Serve: Close the sandwich, slice it in half, and serve immediately while warm and melty.
