These Cherry Popsicles with Greek Yogurt and Honey Swirl are a refreshing and creamy frozen treat perfect for warm days.   • 1 cup cherries (fresh, halved, and pitted, 175 grams – about 1 1/2 cups frozen)

Dairy & Sweetener

  • 2 cups full-fat vanilla Greek yogurt (580 grams)
  • 3 Tablespoons honey (62 grams)


Instructions

  1. Blend cherries: Blend the cherries until they are mostly pureed, leaving some medium-sized chunks for texture.
  2. Mix yogurt and honey: In a medium bowl, combine the full-fat vanilla Greek yogurt with honey and stir until well blended.
  3. Fold in cherry puree: Pour the cherry puree into the yogurt mixture and gently fold until just barely combined to create a swirled effect without fully mixing.
  4. Fill popsicle molds: Using a 1/4 cup measuring cup, scoop the mixture evenly into 10 popsicle molds. After filling each mold with 1/4 cup, use the remaining mixture to fill any leftover space.
  5. Freeze partially and insert sticks: Freeze the molds for one hour, then insert the popsicle sticks ensuring they are positioned for easy removal and eating.
  6. Freeze fully: Freeze the popsicles for at least 3 more hours until completely frozen.
  7. Remove popsicles from molds: Run the molds briefly under warm water to loosen them and gently wiggle each popsicle free.
  8. Serve or store: Enjoy immediately or place them on a parchment-lined baking sheet and refreeze to re-solidify edges. Store in an airtight, freezer-safe container or bag for later.

Notes

  • Use fresh or frozen cherries based on availability; frozen cherries don’t require thawing before blending.
  • Folding the cherry puree gently is key to achieving the pretty swirl effect in the popsicles.
  • Make sure to insert the sticks halfway through the freezing process to ensure they stand upright.
