Ingredients

Pasta

  • 8 oz fettuccine or other pasta

Vegetables

  • 3 cups green cabbage, thinly sliced

  • 3/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta.
  2. Sauté garlic: In a large skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Cook cabbage: Add the thinly sliced green cabbage to the skillet and cook, stirring frequently, for 5-7 minutes or until the cabbage becomes tender and slightly translucent.
  4. Add cream and pepper: Pour in the heavy cream and sprinkle in the black pepper. Stir well, then simmer the mixture for 2-3 minutes to allow the flavors to meld.
  5. Melt Parmesan cheese: Reduce the heat to low and gradually add the grated Parmesan cheese, stirring constantly until it’s melted and creates a smooth, creamy sauce. Season with salt to taste.
  6. Combine pasta and sauce: Toss the drained pasta in the skillet with the cabbage Alfredo sauce. If the sauce is too thick, add small amounts of the reserved pasta water until you reach your desired consistency.
  7. Garnish and serve: Sprinkle chopped parsley over the top if desired, and serve the creamy cabbage Alfredo pasta warm.
