Description

This Chicken Casserole is a creamy, cheesy baked dish featuring tender chicken breasts layered with fresh spinach and topped with Monterey Jack and Parmesan cheeses. It combines simple ingredients into a comforting and flavorful meal, perfect for a quick weeknight dinner.

Ingredients

Chicken

  • 1 lb chicken breasts (2 chicken breasts, cut in half crosswise)

Vegetables

  • 8 oz fresh spinach

Dairy & Sauce

  • 8 oz Monterey Jack cheese, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup parmesan cheese, grated

Seasonings

  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 500°F (260°C). Lightly spray a 13 x 9-inch baking dish with cooking spray to prevent sticking and set it aside.
  2. Make the Creamy Sauce: In a bowl, combine the mayonnaise, sour cream, grated parmesan cheese, ground black pepper, and garlic salt. Mix thoroughly until smooth and well blended.
  3. Layer Spinach: Spread the fresh spinach evenly over the bottom of the prepared baking dish, creating a nutritious green layer as the base of your casserole.
  4. Add Chicken: Arrange the uncooked chicken breast pieces over the bed of spinach, distributing them evenly to ensure all pieces cook through properly.
  5. Spread Sauce: Evenly spread the prepared creamy sauce mixture over the chicken and spinach layers, ensuring all chicken pieces are well coated for maximum flavor.
  6. Top with Cheese: Sprinkle the shredded Monterey Jack cheese evenly across the top of the casserole for a rich, melty topping.
  7. Bake: Place the casserole on the bottom rack of the preheated oven and bake for 20-25 minutes, or until the spinach has shrunk and the chicken breasts are thoroughly cooked, reaching an internal temperature of 165°F (74°C).

Notes

  • You can substitute Monterey Jack cheese with mozzarella or cheddar if preferred.
  • Adjust garlic salt to taste or use regular salt and additional garlic powder if desired.
  • To ensure even cooking, use a meat thermometer to check the chicken’s internal temperature.
  • Let the casserole rest for a few minutes after baking to allow flavors to meld.
  • This dish pairs well with a side of steamed vegetables or a crisp green salad.
