  • 1 (14 ounce) can black beans, drained and rinsed

  • 2 cups shredded Mexican cheese blend or cheddar cheese, divided

Instructions

  1. Preheat Oven: Preheat your oven to 350°F and position the oven rack in the middle to ensure even cooking and melting of the cheese topping.
  2. Cook Ground Beef: Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook, breaking it apart as it cooks, for about 5 minutes until browned and no longer pink.
  3. Add Seasonings and Onions: Stir in the chopped onion, chili powder, garlic powder, and ground cumin. Continue cooking for another 5 minutes until the onions are softened and spices are fragrant.
  4. Prepare Doritos Base: While the beef mixture cooks, evenly spread the crushed Doritos at the bottom of a 9×13-inch casserole dish, creating a crunchy base layer.
  5. Combine Beans, Corn, Salsa, and Cheese: If there’s excess fat in the skillet, spoon out most of it. Stir in the black beans, drained corn, salsa, and half of the shredded cheese. Allow the mixture to warm through on medium heat until the cheese melts and mixture is heated.
  6. Layer Beef Mixture: Spoon the warm beef and vegetable mixture evenly over the layer of crushed Doritos in the casserole dish.
  7. Add Cheese Topping and Bake: Sprinkle the remaining cheese evenly over the top. Bake uncovered in the preheated oven for 15 to 20 minutes, or until the casserole is hot throughout and the cheese is melted and bubbly.
