  • 8 medium slices of Bread (see notes)
  • 5-7 oz / 150-200 g fresh Mozzarella, thinly sliced and patted dry
  • 7 oz / 200 g Taleggio, sliced into thin wedges (approx 5 oz/150 g without rind)
  • 5 oz / 150 g Gorgonzola, sliced into thin wedges
  • 1/2 cup / 40 g freshly grated Parmigiano Reggiano
  • Butter, as needed for spreading


Instructions

  1. Prepare the bread slices: Butter one side of each slice of bread thoroughly to ensure even toasting and flavor.
  2. Assemble the sandwiches: Place half of the bread slices butter side down on a clean surface. Layer the cheese starting with Mozzarella, then Gorgonzola, followed by Taleggio, and finish with a sprinkle of freshly grated Parmigiano Reggiano. Top with the remaining bread slices, butter side up.
  3. Cook the sandwiches: Heat a non-stick pan over medium heat. Add the assembled sandwiches (work in batches if necessary) and fry until the bread slices are golden brown on both sides and the cheese is just starting to melt and leak out, about 3-4 minutes per side.
  4. Serve: Remove the sandwiches from the pan and allow them to rest briefly. Avoid slicing in half to prevent cheesy filling from spilling out. Serve hot and enjoy immediately.

Notes

  • Use bread that is sturdy enough to hold the cheese but not too thick to prevent melting (classic sandwich bread or sourdough work well).
  • Patting the Mozzarella dry helps avoid sogginess in the sandwich.
  • To avoid mess, do not slice the grilled cheese in half before serving as the cheese can spill out.
