Ingredients
Fruit Mixture
- 2 cups frozen berries
- 1 tablespoon cornstarch
Yogurt Mixture
- 1 cup plain, vanilla or honey yogurt (regular or Greek)
- 1/4 cup heavy whipping cream
- 1/3 cup honey
Instructions
- Prep: In a small saucepan over medium-low heat, warm the frozen berries until they become runny and no frozen chunks remain. Mash the berries with a fork for a chunky texture. Remove from heat and set aside.
- Thicken Berry Mixture: Remove 1/2 cup of the warm berries and stir in the cornstarch until smooth and lump-free. Return this mixture to the saucepan with the rest of the berries and stir well to combine.
- Whip Cream: Using a stand mixer or handheld beaters, whip the heavy cream until soft peaks form—where the cream holds shape but is still soft and pliable.
- Combine Yogurt Mixture: In a medium bowl, gently stir together the yogurt, honey, and whipped cream until smooth. Be careful not to overmix to maintain lightness.
- Layer Molds: Spoon a layer of the yogurt mixture into the popsicle molds, followed by a spoonful of the berry mixture. Alternate layers until molds are nearly full, leaving about 1/2 inch of space at the top to allow for expansion when freezing.
- Swirl: Use a straw or butter knife to gently swirl the berry and yogurt layers inside each mold, creating a marbled effect.
- Add Sticks: Insert popsicle sticks into each mold, ensuring approximately 1.5 inches of the stick extends above the top of the mold for easy handling.
- Freeze: Place the molds in the freezer and allow the popsicles to harden for at least 4 hours, though 8 hours is ideal for best firmness.
