Description

Delicious and creamy homemade fruit popsicles combining sweetened yogurt, fresh berries, and a swirl of natural flavors, perfect for a refreshing and healthy treat that’s easy to make at home.

Ingredients

Fruit Mixture

  • 2 cups frozen berries
  • 1 tablespoon cornstarch

Yogurt Mixture

  • 1 cup plain, vanilla or honey yogurt (regular or Greek)
  • 1/4 cup heavy whipping cream
  • 1/3 cup honey

Instructions

  1. Prep: In a small saucepan over medium-low heat, warm the frozen berries until they become runny and no frozen chunks remain. Mash the berries with a fork for a chunky texture. Remove from heat and set aside.
  2. Thicken Berry Mixture: Remove 1/2 cup of the warm berries and stir in the cornstarch until smooth and lump-free. Return this mixture to the saucepan with the rest of the berries and stir well to combine.
  3. Whip Cream: Using a stand mixer or handheld beaters, whip the heavy cream until soft peaks form—where the cream holds shape but is still soft and pliable.
  4. Combine Yogurt Mixture: In a medium bowl, gently stir together the yogurt, honey, and whipped cream until smooth. Be careful not to overmix to maintain lightness.
  5. Layer Molds: Spoon a layer of the yogurt mixture into the popsicle molds, followed by a spoonful of the berry mixture. Alternate layers until molds are nearly full, leaving about 1/2 inch of space at the top to allow for expansion when freezing.
  6. Swirl: Use a straw or butter knife to gently swirl the berry and yogurt layers inside each mold, creating a marbled effect.
  7. Add Sticks: Insert popsicle sticks into each mold, ensuring approximately 1.5 inches of the stick extends above the top of the mold for easy handling.
  8. Freeze: Place the molds in the freezer and allow the popsicles to harden for at least 4 hours, though 8 hours is ideal for best firmness.
  9. Serve: To remove, loosen the popsicles from the molds by running warm water over the outside briefly. Enjoy your homemade fruit popsicles!

Notes

  • You can customize the yogurt flavor to suit your taste—plain, vanilla, or honey all work well.
  • For a thicker berry mix, ensure the cornstarch is fully dissolved before adding back to the berries.
  • Do not over-whip the cream; soft peaks create a smoother, creamier texture for the popsicles.
  • Make sure to leave space at the top of the molds to prevent overflow during freezing.
  • If you don’t have popsicle molds, small paper cups and popsicle sticks can be a great alternative.
  • Allowing the popsicles to freeze overnight yields the best texture.
