Description

This Garlic-Lemon Marinade recipe features tender salmon skewers infused with a zesty blend of fresh lemons, garlic, and herbs. Perfectly grilled to enhance the flavors, this dish offers a refreshing and healthy meal option that’s quick to prepare and ideal for summer cookouts or a light dinner.

Ingredients

Salmon Skewers

  • 1.5 lb salmon filet
  • 2-3 large lemons, thinly sliced crosswise
  • Metal skewers (or bamboo skewers soaked in water)

Marinade

  • 2 tbsp avocado oil (or extra virgin olive oil)
  • Juice from 1 lemon
  • 4 garlic cloves, minced
  • 2 tsp Dijon mustard
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped

Instructions

  1. Prepare the Marinade: In a large bowl, combine the avocado oil, lemon juice, minced garlic, Dijon mustard, sea salt, black pepper, chopped parsley, and chopped dill. Whisk everything together until well blended to create the flavorful marinade.
  2. Cut the Salmon: Slice the 1.5 lb salmon filet into 1-inch pieces, ensuring uniform size for even grilling and easy skewering.
  3. Marinate the Salmon: Gently add the salmon pieces to the marinade and toss carefully to coat each piece fully without breaking them apart. Let the salmon soak up the flavors.
  4. Assemble the Skewers: Thread two salmon pieces onto each skewer, then fold a lemon slice in half and add it after the salmon pieces. Continue alternating salmon and lemon slices until all pieces are skewered.
  5. Preheat the Grill: Heat your grill to medium-high and lightly grease the grates with avocado oil to prevent sticking.
  6. Grill the Skewers: Place the skewers on the grill and cook for 3-4 minutes per side, turning carefully until the salmon is just cooked through, tender, and flaky.

Notes

  • Soaking bamboo skewers in water for at least 30 minutes before grilling prevents them from burning.
  • Adjust the lemon slices quantity based on personal preference for citrus flavor intensity.
  • Use avocado oil or extra virgin olive oil for a healthy fat profile and good smoke point on the grill.
  • Make sure not to overcook the salmon to maintain its moist texture.
  • This recipe can be adapted for indoor grill pans if an outdoor grill is unavailable.
