Description

This easy flatbread recipe is a high-protein, low-carb option perfect for quick snacks or meals. Made with simple ingredients like cottage cheese, eggs, and whey protein isolate, it’s blended into a smooth batter and baked to golden perfection, resulting in a soft yet sturdy bread alternative suitable for a variety of toppings or sandwiches.


Ingredients

Flatbread Ingredients

  • 1 cup cottage cheese
  • 2 large eggs (at room temperature)
  • 2 tablespoons whey protein isolate


Instructions

  1. Blend Ingredients: Place all the ingredients into a blender. Mix at high speed for 10 seconds. Scrape down the sides of the blender and blend again until smooth.
  2. Preheat Oven: Preheat your oven to 150°C fan (170°C static) or 350°F. Prepare a baking sheet by lining it with baking paper.
  3. Spread Batter: Pour the blended batter onto the prepared baking sheet, spreading it evenly into a large rectangle approximately 24 cm x 36 cm (9 x 14 inches).
  4. Bake Flatbread: Bake in the preheated oven for 35 minutes or until the flatbread is golden and cooked through.
  5. Alternate Thermomix Method: If using a Thermomix, place all ingredients into the mixer bowl. Mix for 10 seconds at speed 10. Scrape down the lid and sides and repeat to ensure even mixing. Then proceed with spreading and baking as described above.

  • The flatbread is ideal for sandwiches, wraps, or as a side to dips and spreads.

  • For crispier edges, bake a few minutes longer but watch carefully to avoid burning.
