Description

These Healthy Strawberry Watermelon Popsicles are a refreshing and natural way to cool down on a hot day. Made with fresh watermelon, strawberries, a hint of lime juice, and optional raw honey or maple syrup for sweetness, these popsicles are not only delicious but also packed with vitamins and antioxidants. Perfect for a healthy summer treat, they require minimal prep and no cooking, making them easy to enjoy anytime.

Ingredients

Fruit Base

  • 4 cups Fresh Watermelon (cubed, seeds removed)
  • 2 cups Fresh Strawberries (hulled and halved)

Flavor Enhancers

  • 2 tablespoons Fresh Lime Juice
  • 1-2 tablespoons Raw Honey or Maple Syrup (optional, adjust to taste)

Garnish (Optional)

  • Fresh Mint Leaves

Instructions

  1. Prepare the Fruit: Begin by dicing your fresh watermelon into small cubes, carefully removing any large black seeds. Hull the strawberries by removing the stems and slice them in half to prepare for blending.
  2. Blend the Mixture: Place the watermelon cubes, halved strawberries, fresh lime juice, and your chosen natural sweetener, if using, into a high-speed blender. Blend on high until the mixture becomes smooth and evenly pureed.
  3. Taste Test: Sample the blended mixture and adjust the sweetness if desired by adding more raw honey or maple syrup. Blend briefly again if you add sweetener to incorporate it fully.
  4. Fill the Molds: Carefully pour the fruit puree into popsicle molds, leaving a small space at the top to allow for expansion during freezing.
  5. Add the Sticks: Insert popsicle sticks into the molds after filling them. Cover the molds if your set requires it to prevent ice crystals from forming.
  6. Freeze: Place the filled molds in the freezer for at least 4 to 6 hours, or preferably overnight, until fully solid and frozen.
  7. Unmold and Enjoy: To remove the popsicles, briefly run the molds under warm water. This loosens the edges, allowing the popsicles to slide out easily. Garnish with fresh mint leaves if desired, and enjoy your refreshing treat.

Notes

  • You can substitute strawberries with raspberries or blueberries for a different berry flavor.
  • Adjust the sweetness to your liking or omit the sweetener entirely if your fruits are naturally sweet.
  • For an adult twist, add a splash of lime-flavored sparkling water or a hint of mint to the blend before freezing.
  • These popsicles are best consumed within 2 weeks for optimal freshness and flavor.
  • Ensure molds are sealed properly to avoid freezer burn.
