Salad
- 1 1/2 lbs heirloom tomatoes
- 8 oz burrata (2 balls), drained and patted dry
- 1/2 cup fresh basil leaves
- 2 sprigs fresh oregano leaves
Dressing
- 1/3 cup good quality drizzling olive oil
- 3 tablespoons sherry vinegar
- 1/2 small shallot, finely minced
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Maldon flaky salt & freshly cracked black pepper, to taste
Instructions
- Make the dressing: In a small bowl, whisk together the minced shallots, sherry vinegar, olive oil, Dijon mustard, and honey until the mixture emulsifies into a smooth vinaigrette. Season with maldon flaky salt and freshly cracked black pepper to taste. For best flavor, let the dressing rest for at least one hour to allow the ingredients to meld together.
- Prep the tomatoes and burrata: Using a sharp knife, slice the heirloom tomatoes into 1/2-inch thick slices. Spread the tomato slices evenly on a serving platter. Sprinkle them generously with flaky salt and freshly cracked black pepper. Arrange the drained and patted dry burrata balls around and between the tomato slices. Gently crush the fresh basil and oregano leaves by slapping them lightly between your palms, then scatter the herbs evenly over the tomatoes and burrata.
- Dress and serve: Drizzle the prepared dressing evenly over the tomatoes, burrata, and herbs using a spoon. Serve immediately to enjoy the fresh flavors at their peak.
