Ingredients
Crust
- 2 ½ cups graham cracker crumbs
- ½ cup salted butter, melted
Filling
- ½ cup salted butter, softened
- ½ cup cream cheese, softened
- 2 cups powdered sugar (icing sugar, confectioner’s sugar)
- 1 cup whipping cream
- One 20-ounce can crushed pineapple, thoroughly drained
Topping
- Remaining ⅓ graham cracker crumbs reserved from crust mixture
Instructions
- Prepare crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine 2 ½ cups of graham crumbs with the melted ½ cup salted butter, mixing until evenly moistened. Press about two-thirds of this mixture firmly into the bottom of an 8×8-inch baking pan. Bake the crust for 8 to 10 minutes until set and golden. Remove from oven and allow to cool completely.
- Make butter mixture: Using a hand or stand mixer, beat the softened ½ cup butter until light and fluffy. Gradually add the softened ½ cup cream cheese and beat until smooth and lump-free. Slowly incorporate the 2 cups powdered sugar, mixing until fully combined into a creamy, smooth mixture.
- Assemble the second layer: Once the crust is completely cooled, spread the butter and cream cheese mixture evenly over the crust layer in the pan.
- Prepare pineapple topping: In a separate medium bowl, beat 1 cup whipping cream until stiff peaks form. Gently fold in the thoroughly drained crushed pineapple, mixing carefully to maintain the lightness of the whipped cream.
- Add pineapple layer and topping: Spoon the pineapple and whipped cream mixture evenly over the butter layer, smoothing the surface. Then sprinkle the remaining graham crumb mixture evenly on top as a finishing touch. Cover the pan with plastic wrap.
- Chill and serve: Refrigerate the dessert overnight to allow flavors to meld and the layers to set firmly. If serving the same day, refrigerate for at least 4 hours before slicing and serving chilled.
