Description

This Pineapple Slice is a delightful no-bake dessert featuring a buttery graham cracker crust, a creamy layer of butter, cream cheese, and powdered sugar, topped with whipped cream folded with crushed pineapple and finished with a graham crumb topping. Refrigerated overnight, it offers a perfect balance of sweetness and tropical fruitiness ideal for any occasion.

Ingredients

Crust

  • 2 ½ cups graham cracker crumbs
  • ½ cup salted butter, melted

Filling

  • ½ cup salted butter, softened
  • ½ cup cream cheese, softened
  • 2 cups powdered sugar (icing sugar, confectioner’s sugar)
  • 1 cup whipping cream
  • One 20-ounce can crushed pineapple, thoroughly drained

Topping

  • Remaining graham cracker crumbs reserved from crust mixture

Instructions

  1. Prepare crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine 2 ½ cups of graham crumbs with the melted ½ cup salted butter, mixing until evenly moistened. Press about two-thirds of this mixture firmly into the bottom of an 8×8-inch baking pan. Bake the crust for 8 to 10 minutes until set and golden. Remove from oven and allow to cool completely.
  2. Make butter mixture: Using a hand or stand mixer, beat the softened ½ cup butter until light and fluffy. Gradually add the softened ½ cup cream cheese and beat until smooth and lump-free. Slowly incorporate the 2 cups powdered sugar, mixing until fully combined into a creamy, smooth mixture.
  3. Assemble the second layer: Once the crust is completely cooled, spread the butter and cream cheese mixture evenly over the crust layer in the pan.
  4. Prepare pineapple topping: In a separate medium bowl, beat 1 cup whipping cream until stiff peaks form. Gently fold in the thoroughly drained crushed pineapple, mixing carefully to maintain the lightness of the whipped cream.
  5. Add pineapple layer and topping: Spoon the pineapple and whipped cream mixture evenly over the butter layer, smoothing the surface. Then sprinkle the remaining graham crumb mixture evenly on top as a finishing touch. Cover the pan with plastic wrap.
  6. Chill and serve: Refrigerate the dessert overnight to allow flavors to meld and the layers to set firmly. If serving the same day, refrigerate for at least 4 hours before slicing and serving chilled.
