Description

This Pizza Stuffed Chicken recipe features tender chicken breasts stuffed with spicy and deli pepperoni slices and mozzarella cheese, baked with flavorful pizza sauce and topped with extra cheese for a deliciously cheesy, pizza-inspired main dish. Ingredients

Chicken and Filling

  • 4 boneless skinless chicken breasts, butterflied and flattened
  • 16 small spicy pepperoni slices (4 per chicken breast)
  • 12 large deli pepperoni slices (3 per chicken breast)
  • 4 part-skim mozzarella cheese snack sticks, cut into pieces for stuffing

Toppings and Sauce

  • 1 cup shredded mozzarella cheese (for topping)
  • 1 jar (13 ounces) Flora pizza sauce
  • 1/2 cup grated Parmesan cheese

Seasoning

  • 2 teaspoons Salt Odyssey Sea Salt with Oregano and Sesame (or homemade mix of 50% sea salt, 25% oregano, and 25% Italian seasoning)


Instructions

  1. Prepare the Baking Dish: Grease a 9″ x 13″ (3 quart) baking dish to prevent sticking.
  2. Butterfly and Flatten Chicken: Butterfly each chicken breast and place between plastic wrap or inside a Ziploc bag. Pound flat to about 1/4-inch thickness. Season both sides with the sea salt with oregano and sesame seasoning or the homemade mix.
  3. Stuff the Chicken: Lay the chicken cutlets on a work surface. In the center of each, add 3 large pepperoni slices, 4 small spicy pepperoni slices, and pieces of mozzarella cheese string. Wrap the cheese inside the pepperoni slices to prevent it from leaking out while cooking. Roll up each chicken breast tightly and secure with toothpicks, using as many as needed to lock the corners.
  4. Assemble in Baking Dish: Spread pizza sauce evenly on the bottom of the baking dish. Place the stuffed chicken rolls in the dish and spoon more pizza sauce over the top of each.
  5. Bake the Chicken: Bake in a preheated oven until the chicken is nearly cooked through, approximately 30 minutes.
  6. Add Cheese Toppings: Remove the baking dish from the oven and top each chicken roll-up with additional pizza sauce, shredded mozzarella, and Parmesan cheese.
  7. Finish Baking: Return the dish to the oven and bake for an additional 4-5 minutes, or until the cheese is melted and bubbly and the sauce is hot.
  8. Serve: Remove toothpicks carefully and serve the pizza stuffed chicken immediately while hot.

Notes

  • Use plastic wrap or a Ziploc bag when pounding chicken to avoid mess and ensure even thickness.
  • Wrapping the mozzarella cheese with pepperoni before stuffing prevents cheese from melting out during baking.
