Instructions
- Brown the beef: Place the ground beef in a large pot on the stove over medium heat. Cook it, stirring occasionally, until it is fully browned and no longer pink, about 7–10 minutes.
- Prepare the cheese: Cut the Velveeta cheese into chunks or cubes. This helps the cheese melt evenly and faster when combined.
- Combine ingredients and melt: Add the entire can of Rotel tomatoes (including the juice) to the browned beef in the pot. Then stir in the Velveeta cheese chunks. Stir frequently over medium heat until the cheese has completely melted and the mixture is smooth and creamy.
- Serve warm: Transfer the dip to a serving bowl immediately. Serve it warm alongside your favorite chips, crackers, or fresh vegetables for dipping.

- Use lean ground beef to reduce excess grease in the dip.
