Instructions

  1. Prepare the shrimp mixture: In a bowl, toss the peeled and deveined jumbo shrimp with crushed garlic, crushed red pepper, ½ teaspoon kosher salt, and olive oil until evenly coated to marinate the flavors together.
  2. Cook the shrimp: Heat a 10″-12″ skillet over medium-high heat until hot. Add the shrimp mixture in a single layer and cook for 1 minute without stirring to allow a slight sear. Then flip the shrimp over and instantly add the chopped parsley, chopped rosemary, and the drained cannellini beans, gently stirring to combine.
  3. Add tomato puree and simmer: Pour in the canned tomato puree and ¼ cup of water into the skillet. Bring the mixture to a gentle simmer and cook for approximately 5 minutes, or until the shrimp turn opaque indicating they are fully cooked, and the sauce thickens slightly for a rich consistency.
  4. Finish with butter: Stir in 2 tablespoons of butter into the sauce until it melts completely, enriching the stew with a creamy texture. Taste the sauce and adjust seasoning by adding more salt if desired.
