Description
A flavorful, quick shrimp stew featuring jumbo shrimp, white cannellini beans, and a fragrant tomato-based sauce infused with garlic, crushed red pepper, and fresh herbs, perfect for a comforting meal served over pasta or rice.
Ingredients
Shrimp and Seasoning
- 1 pound jumbo (16-20) raw shrimp, peeled and deveined
- 1 tablespoon crushed garlic
- ½ – 1 teaspoon crushed red pepper (to taste)
- ½ teaspoon kosher salt
- 2 tablespoons olive oil
Herbs and Beans
- 1 tablespoon chopped parsley
- 1 tablespoon chopped fresh rosemary
- 1 (15-ounce) can cannellini beans, drained
Tomato Base and Finishing
- ½ cup canned tomato puree
- ¼ cup water
- 2 tablespoons butter
Instructions
- Prepare the shrimp mixture: In a bowl, toss the peeled and deveined jumbo shrimp with crushed garlic, crushed red pepper, ½ teaspoon kosher salt, and olive oil until evenly coated to marinate the flavors together.
- Cook the shrimp: Heat a 10″-12″ skillet over medium-high heat until hot. Add the shrimp mixture in a single layer and cook for 1 minute without stirring to allow a slight sear. Then flip the shrimp over and instantly add the chopped parsley, chopped rosemary, and the drained cannellini beans, gently stirring to combine.
- Add tomato puree and simmer: Pour in the canned tomato puree and ¼ cup of water into the skillet. Bring the mixture to a gentle simmer and cook for approximately 5 minutes, or until the shrimp turn opaque indicating they are fully cooked, and the sauce thickens slightly for a rich consistency.
- Finish with butter: Stir in 2 tablespoons of butter into the sauce until it melts completely, enriching the stew with a creamy texture. Taste the sauce and adjust seasoning by adding more salt if desired.
- Serve: Serve the hot shrimp and bean stew immediately over cooked pasta or rice for a hearty and satisfying meal.
Notes
- You can adjust the amount of crushed red pepper to match your preferred spice level.

- Butter adds a silky finish but can be omitted for a dairy-free version.
- This stew pairs wonderfully with rice, pasta, or crusty bread to soak up the flavorful sauce.
